Europe’s first ‘nitro’ ice-cream parlour is also London’s most unconventional. Run by husband-and-wife team Ahrash Akbari-Kalhur and Nyisha Weber, The Chin Chin Laboratorists crafts decadently rich ice-cream using liquid nitrogen. Placing emphasis on the scientific aspect in gastronomy, this new addition to Camden Lock Place is well worth a visit for its novel approach and fun extras, such as the gold-dusted popping candy.

Chef Jacob Kennedy’s second venture into the world of gastronomy, a gelateria, delicatessen and espresso bar on Archer Street, is already a success. Taking inspiration from 50s Italy, Gelupo evokes the mood and detail of La Dolce Vita with its original wooden floorboards and long marble counter. Flavours run the gamut from blood orange and burnt almond to pinenut and fennel seed. The drinks menu is equally good: try a Piedmontese bicerin, a layered blend of espresso, dark chocolate and cream.

Frozen yoghurt is the focal point of Snog, the Soho parlour co-founded in 2008 by Rob Baines and Pablo Uribe. The secret is in the balance of nutrition and flavour: Snog’s fat-free, signature base is sweetened with organic agave nectar, while toppings take a more indulgent slant. Options might include jumbo chocolate chip cookies, coconut shavings, watermelon or red bean paste.

Carlo del Mistro, who left his position in corporate strategy at Lehman Brothers to open Gelato Mio in 2008, sees ice-cream as an investment. ‘It’s a great way to make a living,’ he says. His Holland Park gelateria serves up fresh and perfectly conceived sorbets, made from seasonal fruit, sugar and bottled mineral water. Order a scoop of amarena, a delicate ice-cream streaked with black cherries.

After a successful run as a café-installation in Selfridges’s Ultralounge, the Icecreamists has opened a concept boutique in Covent Garden, serving theatrical concoctions from volcano-inspired cocktails to ice-cream sandwiches named after members of the British Royal Family and beyond. The aim is to subvert tradition and the anarchic décor, a mix of neon graffiti and jet-black walls, reinforces this message.
