Creating food that offers health benefits without sacrificing flavour requires a great deal of skill. Happily, the team at La Suite West’s Raw restaurant makes it look easy, presenting a menu that delicately balances haute cuisine principles with healthy eating. Head chef Paolo Catalano creates every dish on his vegan menu perfectly, offering intense natural flavours while also adhering to raw principles, meaning that no ingredient is heated above 42°C. Menu options range from mango and avocado maki with radish rice to mushroom and quinoa burger served in a sweet potato bun and topped with a basil-infused barbecue sauce. A selection of non-alcoholic cocktails offers the perfect accompaniment.

The hotel’s newly launched afternoon tea is a surprisingly health-conscious take on this British classic. Vegan finger sandwiches feature fillings such as tofu, butternut squash and grilled Portobello mushrooms, while sweet options include mini chocolate and coconut cakes and homemade scones topped with lightly whipped coconut cream and fresh strawberries.
