Korean-born Kim is a star in Vienna. No wonder it takes a month to get a table at her restaurant. Kim’s avant-garde approach is an ingenious fusion of Western and Asian styles. Each night she serves a meal of three to five courses; everyone eats the same and nobody knows what’s on the menu until it’s served. Kim has just opened a studio where she sells extravagant ingredients such coriander pesto and sardine sauce, and also offers cookery classes. The shiso tea with its giant purple leaves is a must-try.
